Everyday Pancakes

Does quarantine life make anyone else crave pancakes every other day? Once reserved as a weekend treat is now a frequent comfort for old and young alike! Anthony makes them just about every single day for him and his daughter; it's become their favorite morning ritual. The beauty of pancakes is that they're simple and the recipe is flexible. You can tweak to suit your preferences or add whatever toppings (choc chips, blueberries, apple compote... ) your heart desires. Have you made pancakes lately?

Wet ingredients (mix well)
3/4 cup milk
1 tablespoon of olive oil
1 egg

Dry ingredients (mix well)
1 cup of all purpose flour
- can do 1/2 whole wheat, 1/2 all purpose and sometimes I add an extra 1/2 cup of oats
1 tablespoon of sugar
big pinch of salt
1 teaspoon of baking  powder

1. Add dry to wet, then thin down with more milk to the desired consistency. More dry for thicker pancakes, looser for thinner ones.  If you add oats, you will need an extra 1/4-1/2 cup of milk depending on your desired consistency.

2. Cook them in a cast iron skillet or non-stick pan with about 1 tablespoon of butter or olive oil. Flip sides when you see air bubbles throughout and edges almost cooked through.

I am all about having fun with pancakes and sometimes I'll substitute 1/4 cup of milk for canned pumpkin and add a teaspoon of pumpkin pie spice. Enjoy!   - Anthony
